2 Ingredients pancakes (egg & banana)

Happy Pancake Day my lovelies! It’s only right I share with you this quick 2 ingredients (vegan friendly) pancake recipe. Who doesn’t like a tasty, healthier alternative when it comes to food - I know right... Not only are these delicious and nutritious, they are also super quick and easy to make (Approx 10 mins) 

for 4 serving
1 Banana
2 medium Eggs
pinch of Baking powder
splash of Extract - of your choice. 
1 tsp Oil
Whipped Cream

1.  Mash the banana in a large bowl until smooth. Stir in the beaten eggs, baking powder and the extract. 

2. Heat a frying pan on medium heat and brush the oil in. Spoon the pancakes into the pan, cook each side for a minute or 2 at a time until golden brown. Repeat the process with the rest of the mixture and place in a plate once all cooked.  

3.Garnish your pancakes with your favourite toppings :) I used honey, blueberries, raspberries and some whipped cream.
